Applying the Learning Curve Theory
In 1950 a family-owned business, named Mario Pizzeria opened. The shop serves traditional authentic tasting pizza prepared with fresh ingredients.   Currently, Mario has been encountering a loss of customers because of the excessive amount of time the customers spend waiting.   Mario wants to give the pizzeria to his Grandson, but first he must prove that he can increase the profits by managing the five performance points considered in this simulation are: the average wait time, the average queue length, and the number of tables, the wait staff and the ovens and the capacity and the demand for service abilities without loss of profits.   Mario must also consider the profits potential in updating the technology such as the manual ovens currently in use.
The goal for Mario’s Grandson is to decrease the wait time to five minutes or less, while considering the training time he will need before implementing methods that will decrease the wait time and improve the capacity and demand for service systems.   Here the learning curve will become an important process for improvement and an increase productivity resulting in an increase in profits.
The learning curve is a time when an employee gains more experience at a task, or improves efficiency at a particular job role.   The learning curve theory states, if an employee performs a task regularly, the employee will decrease the time it takes to complete the same task. The learning curve is an important tool to process improvement, and increased productivity, usually resulting in increased profitability.
The learning curve concept also can be applied to this situation as a cost estimator and analysts.   First, a determination of the number of staff, kitchen staff, and tables will need to be made before improvement taking place
