Dietary Assignment

The Canadian Food Guide is set for a reason; each food group gives us vital nutrients that are essential for survival. Fruit and vegetables contain five imperative substances; fiber, folate, potassium, vitamin A, and vitamin C. Fibre is responsible for absorbing water, relieve the excretion of waste, and pushing food through the digestive system. A decreased risk of coronary artery disease has been shown in diets that are rich in fiber[2]. Folate is necessary for the production and maintenance of new cells [3].   Potassium is essential for a healthy blood pressure, and is used in many neurological reactions in the body. Vitamin A is used in a variety of different way throughout the body. It is essential for the health of skin and vision, as well as the immune system. Vitamin C is needed for the health of teeth and gums, as well as the healing process of skin. [2]

Milk products are evident in a great many foods, and contain essential nutrients and substances. Milk can be broken down into fat (3.9%), water (87.3%), and non-fat solids (8.8%).   The non-fat solids can be then further broken down into different substances as outlined in Figure 1.2. Lactose is broken down into glucose and galactose, which is then transported and used around the body. The minerals contained within milk are calcium, phosphorus, magnesium, potassium, sodium, zinc, chlorine, iron, copper, sulphates, and bicarbonates. The acids include citric, formic, acetic, lactic, and oxalic. Each one of these substances is required and used by different areas of the body. [4]

Grains are important in one’s diet because they are full of fiber, whose nutritional information is provided above. They also are generally low in fat. B vitamins, carbohydrates, iron, zinc, and magnesium are all found in grain. A diet that is rich in grain is shown to lower the risk of cardiovascular disease. [5]
