Brewing Monks: An Evaluation of Chimay
How does one choose a particular beer over another?   Many people do not consider the beer itself as a discerning quality when choosing their beer but are more influenced by commercials, social influence and availability.   Every beer has a story to tell, from where and how it’s made to its perceived taste and final consumption.   One particular beer, Chimay has interesting characteristics that help elevate it to among the most desirable.   Chimay’s style description, ingredient profiles and sensory characteristics are the discriminating qualities that set it apart from other beers.  
The identification of style is one of the first steps to describe and evaluate any beer.   Chimay is considered a Belgian Trappist Ale.   Chimay is the largest out of eight members of the International Trappist Association that can use the “Authentic Trappist Product” trademark on their products.   It is brewed at the Abbey Norte-Dame de Scourmont, which was first created in 1850.   In order to be considered an authentic Belgian Trappist Ale a few things are required for acceptance into this exclusive category.   The product must be made within the walls of a Trappist abbey, at minimum supervised by the monastery community, and the largest apart of the profit from its sale must be spent on social work.   These characteristics make Trappist-brewed beers very hard to define in style due to the large variances within the group.   They may be very strong or not so strong, light in color or dark and various flavors can flourish.   The abstract definitions of Trappist ale may confuse some people but the style is meant to communicate something about the beer to consumers.   The historical perspective and insights about how the beers are brewed add a little something that others beers have a hard time competing with.   When the Abbey at Scourmont first developed monks were the primary workers in the brewery and the farmland around it.   They developed the...
